Traditional Jharkhand cuisine is equally vegetarian as well as non-vegetarian. These traditional dishes are not available at the restaurants as they have not been commercialised. However on a visit to a tribal village or a tribal wedding in a remote area one can get a chance to taste such exotic food. All preparation except the pickles and festive ones are low on oil and spices.

 Spicy Cabbage

Ingredients

* 3 Tblsp Vegetable oil

* 1/4 tsp chili powder

* 1/4 tsp mustard seeds

* 4 cups cabbage, shredded

* 1 small onion, chopped

* salt to taste

* 1 fresh or pickled green chili, finely chopped

* 2 tsp chopped chives

* 3/4 cup water

* 1/4 tsp turmeric powder

* Juice of 1 lime

Method

* Heat oil and fry mustard seeds until they pop.

* Put in onion and fry until light brown.

* Add green chili, turmeric and chili powder, and fry for a minute.

* Mix in cabbage, salt and chives; fry for 3 minutes, stirring well.

* Add water and simmer about 7 minutes.

* Add lime juice and mix thoroughly.

* Serve hot with steamed rice.  

Thekua

 Ingredients

 

Wheat flour

ghee

sugar

dried coconut

sherries

cashew nut

oil (refined oil preferred)

 

Method - First take the wheat flour or aata in a vessel, like a pan, then add the ghee into it. Add sugar and mix the stuff well. Then add the dried coconut, sherries and cashew nut and mix it well into the stuff. Then make any shape you like, rectangular or circular and then fry it well in the pan after making "Goli(s)". Enjoy your freshly made Thekuas and preserve them for eating afterwards.
